Just Peachy Slaw

Just Peachy Apple Slaw

2 ripe peaches, pitted and diced
1 apple, shredded with a box grater
2 carrots, peeled and shredded
1 stalk celery, diced small
1 small red onion, very thinly sliced
2 cups shredded cabbage
15-20 mint or Thai basil leaves, chiffonade cut
4 sage leaves, chiffonade cut
juice of a lemon
2-3 teaspoons honey
¼ cup extra virgin olive oil
1-2 teaspoons of sesame oil
salt and pepper to taste

 

Put all prepared veggies  and fruit into a large bowl. In a small bowl whisk together the lemon juice,honey sesame oil and chiffonade of herbs o incorporate. Whisk in the evoo in a steady stream. Whisk for another few seconds to bring the dressing together, be sure the honey is well mixed in. Pour the dressing over the veggies and fruit, and toss well. This slaw will last a good week in the fridge and only gets better as it has time to sit and the flavors marry! Sprinkle with some sesame seeds if you wish and serve!
