Caprese Quinoa Salad

1 cup    quinoa, cooked
4 oz.      mozzarella, cut into 1/4 inch cubes
1 pint    cherry tomatoes, cut in half
1 bch.    spinach, chopped
1/2 cup fresh basil, torn into pieces, packed
1/4c       EVOO
2-3 T      balsamic vinegar
Salt and pepper

Whisk EVOO into a small bowl with the balsamic vinegar;  Season with salt and pepper;   Put all other prepared ingredients into a bowl toss well;   Add the dressing right
