1 head cauliflower, cut into 1-2 inch pieces
1 tbsp olive oil
¼ cup fresh-squeezed orange juice
¼ cup Sriracha sauce
1 tsp pink salt
1 tbsp garlic, minced
Cilantro, coarsely chopped
2 green onions, sliced
Combine the olive oil, orange juice, Sriracha sauce, garlic and salt together in a 1-gallon plastic bag. Add cauliflower. Shake well until cauliflower is well coated. Marinate in refrigerator for 1 hour or overnight.
Preheat oven to 450 degrees F. Place cauliflower on a rimmed cookie sheet, reserving the marinade. Place cauliflower in the oven and roast for 20 minutes, flipping them half way through. Remove from the oven and turn on broiler to high.
Brush the cauliflower with reserved marinade, then broil for 5 minutes or until slightly browned.
Top with cilantro and green onions. Serve.
