Berry Citrus Pecan Salad with Lemon Chia Seed Dressing

My husband, who usually doesn’t like fruit, raved about this salad. He said it “tricked him into eating fruit”.
1 cup Pecan Halves
1 head Romaine lettuce, torn into bite-size pieces
1 pint fresh strawberries, sliced
1/2 pint fresh blueberries
2 oz goat cheese, crumbled
1/4 cup red onion, thinly sliced
2 or 3 Tangerines, peeled, seeded and cut into chunks
2 grilled chicken breasts or thighs, sliced or diced (optional)
1/4 cup raw honey
1/4 cup fresh lemon juice
1/2 tsp dijon mustard
1/4 tsp pink salt
1/2 cup olive oil
1/2 tbsp Chia seeds
In a large bowl, combine romaine, berries, tangerines, goat cheese and onion. Add chicken. Toss gently.
In a small mason jar, combine dressing ingredients and shake with lid on.
When ready to serve, add pecans and drizzle with dressing. ENJOY!
