Braised Leek, Celery and Apple

1 leek, outer leaves peeled and washed, sliced into 1inch pieces
3 stalks celery, peeled and sliced into 1 inch pieces
1 apple cored and sliced very thin
1 sprig fresh thyme
2-3 tablespoon EVOO
A splash of white wine or white wine vinegar
Put the EVOO into a heavy bottom pan heat to medium then add the leeks. Cook for 4-5 min then add the celery apple thyme salt and pepper. Saute’d until celery is tender, about 4-5 min longer. Once tender, add a splash of white wine let it bubble for a minute; then add a couple tablespoons of water. Simmer until most of the liquid evaporates. If the pan gets too dry too quickly add a bit more water. All veggies should be tender and delicious! Enjoy as a great side dish or add some mushroom to the saute’ed and serve over rice for a great vegan meal! Find more recipes at highdesertfarmersmarket.com
