Spring red lettuce and cabbage salad w/ginger & vinegar dressing

Salad:

1/4 Head Red Lettuce
1/4 Head Green Cabbage
1 c. Red cabbage
2 c. spinach
2 c. Endive
3 Shaved Carrots

Toss together in large bowl.

Dressing:

1/2 C. Onion
1/2 C. Peanut oil
1/3 c. Rice Vinegar
2 tbs. Water
2 Tbs. fresh ginger, grated
1/2 stalk celery
1 tbs. Tomato Paste
4 tsp. Soy Sauce
2 tsp. Sugar
2 tsp. Lemon Juice
1/2 tsp. salt
1/4 tsp. black pepper

Place ingredients into blender and mix until smooth.  Gently toss into salad.
