Fried Okra with Ranch Dressing

Serves 4
Ingredients:
1 pound okra, smallish pods, ½-inch slices
1 ¼ cups corn flour (masa)
1 ½ tsp garlic powder
¼ – ½ tsp ground cayenne pepper
1 tsp sea salt
½ tsp black pepper
4 free-range eggs, beaten
1 ½ cups oil (I prefer coconut oil)
Ranch Dressing Ingredients:
¾ cup mayonnaise
¼ – ½ cup milk or buttermilk (amount depends on thickness desired)
1 clove garlic, minced
½ tsp onion powder
1 tsp dried parsley
1 tsp dried dill weed
½ tsp dried cilantro
Juice of ½ lemon
Black pepper to taste
Directions:
Mix all dressing ingredients together in a pint size mason jar. Put a lid on it and shake well. Refrigerate an hour or so before serving.
Heat oil in a large skillet over medium heat. In a bowl, mix together dry ingredients. Place okra slices in beaten eggs. Next, dredge okra in corn flour mixture, and then place in single layer in hot oil. You will need to do this in at least 2 batches. Cook, turning occasionally until okra is a uniform golden brown color. Remove from oil, drain on paper towels. Serve with ranch dressing. ENJOY!
Note: Corn meal works, too, but I prefer the less gritty texture of corn flour.
