Garlic and Herb Hot Feta

1/2 onion, minced
2 cloves garlic, minced
1 cup feta cheese
4 tablespoon EVOO
2 tablespoons each mint, parsley & chives or green onion, minced
1 teaspoon lemon zest
Black pepper to taste
A drizzle of honey

Sauté onions in olive oil over medium heat until translucent, about 5 minutes. Add the garlic and cook one minute more. Turn heat to low, add feta. Cook until it melts, stirring in the onion and garlic. Add all the herbs, black pepper and lemon zest stir to combine. Put hot feta in a bowl and drizzle with honey. Serve with raw veggies, pita bread or crackers. Use as a topping for crostini, or toss with your favorite hot noodles! Enjoy!
