Honey Glazed Chinese Green Beans

1 bunch     Chinese long beans, trimmed , cut into 1” pieces
2                 Carrots, peeled, sliced ¼” on bias
1 small       red onion, sliced thin
2 T              coconut oil
½ tsp.         pepper flakes
2 T              soy sauce
1 T              honey
2 T              pumpkin seeds (Pepitas)
1 T              mint, finely chopped

Heat coconut oil over medium heat; Add chili flakes and onions, cook for 5 min.; Meanwhile blanch green beans for 1 min in boiling water then drain.  Set aside. Add carrots to onions; cover with lid to steam for 4 min.; add green beans; add soy & honey, cover for 5 min. ; remove from heat;  add Pepitas and mint.  Serves 4
