1 head cauliflower, cut into 1-2 inch pieces
2 tbsp olive oil
1 large lemon
½ tsp black pepper
1 tsp pink salt
1 tbsp garlic, minced
Combine the olive oil, juice of ½ of the lemon, garlic, pepper, and salt together in a 1-gallon plastic bag. Add cauliflower. Shake well until cauliflower is well coated.
Preheat oven to 400 degrees F. Place cauliflower on a rimmed baking sheet. Place cauliflower in the oven and roast for 20-25 minutes, flipping them half way through.
Remove from the oven and drizzle with the juice of the other lemon half. Serve.
