Marinated Autumn Salad

1 bunch   kale, sliced very thin, cores & stems removed
1 bunch spinach, stems removed, sliced thin
2  apples, shredded
2 – 3 carrots, shredded
½ tsp. sesame oil
juice of 2 lemons
juice & zest of 1 oranges
1 T honey
pinch cayenne pepper
1 tsp. salt plus more to taste
¼ cup EVOO
¼ cup dried cranberries
¼ cup Pepitas

Place kale in a large bowl with 1 tsp. salt and lemon juice; massage kale till ½ inch in size and soft. About 5 – 6 min.;  Add the spinach, apple, carrot, cranberries and pepitas to the kale .

In a separate small bowl whisk together the honey, orange and zest, cayenne and salt, sesame oil; drizzle in EVOO while whisking- emulsify dressing; pour over salad and toss to coat.
