Mushroom medley radish

1 lg.        potato, diced small
10           radish, diced small
½             white onion diced small
1              bowl mushroom medley (variety about one pound)
2              cloves garlic, minced
1 T.         salt & black pepper
½ tsp.    red pepper flake
2 T.         parsley, minced
1 tsp.     rosemary, minced
2 T.         oil

Heat oil in cast iron pan over medium heat;  Add potato, onion, salt, pepper and red pepper flake;  Cook 6-8 min or until onion turns translucent, and potatoes are golden, season with salt and pepper. Add radish and cook 4 min more. Add mushroom and rosemary and cook 5 min longer. Add more oil if pan is dry; Add garlic and cook 1 more min, then remove from heat and add parsley.
