🥗 Shrimp Santa Fe Salad Recipe
Ingredients:

1 lb shrimp, peeled and deveined

1 head romaine lettuce, chopped
-
1 head red leaf lettuce, chopped
-
1 avocado, diced
-
½ cup pumpkin seeds, pepitas, or sunflower seeds
-
1 small sweet Maui onion, thinly sliced
-
2-3 radishes, thinly sliced
-
1 cup cherry or heirloom tomatoes, halved
-
¼ cup chopped cilantro
-
¼ cup your favorite salsa
-
Juice of 1 lemon
-
Mango balsamic vinegar (to taste)
-
Seasoning of choice (we used Flavoured’s blend)

Olive oil (optional)

Salt & pepper
Instructions:

Prep the shrimp: Rinse and pat dry the shrimp. Season shrimp with your favorite seasoning blend, salt, and pepper. Sauté or grill with olive oil or butter until pink and fully cooked (about 1-3 minutes per side).

Make the base: In a large bowl, combine chopped romaine, red leaf lettuce, tomatoes, radishes, onion, and cilantro.

Add the toppings: Toss in diced avocado, pumpkin seeds, and cooked shrimp.

Dress it up: Drizzle with mango balsamic vinegar and lemon juice. Add a spoonful of salsa as a topping or mix it into the dressing.

Toss & serve: Give it a light toss and serve immediately.
