Spicy Beets & Carrots Salad

Serves 4

 

Ingredients:

2 large beets, peeled, grated

2 large carrots, grated

¼ cup fresh basil, chopped

3 ounces feta cheese with jalapeno (Mom’s Specialty Foods; ½ a container)

3 tbsp extra virgin olive oil

Juice of 1 lemon

Zest of 1 lemon

½ tsp minced fresh ginger

1 tsp dried minced garlic or 2 cloves, minced

½ tsp sea salt

¼ to ½ tsp black pepper

Directions:

In a large bowl, combine the beets, carrots, basil, and feta cheese with jalapenos. Add the remaining ingredients to a small mason jar, put on the lid and shake well. Pour the dressing mix over the beets mixture and toss well.

Serve and enjoy!
