Spring Salad with Mandarin Vinaigrette

Serves 4

Salad Ingredients:

1 ½ cups red lettuce, torn or chopped

1 ½ cups Swiss chard, torn or chopped

1 ½ cups dandelion greens, torn or chopped

1 large Fuji apple, cored, quartered and sliced

1 large avocado, diced

½ cup pumpkin seeds

2 large Mandarin oranges, peeled and cut into chunks

½ dried cranberries

Mandarin Vinaigrette Ingredients:

Juice and zest of 2 large Mandarin oranges

2 tbsp coconut vinegar (apple cider vinegar works, too)

2 tbsp raw honey (maple syrup if vegan)

1 clove garlic, minced

¼ tsp sea salt

2 tbsp extra virgin olive oil


Place salad ingredients in a large bowl. Toss gently. In a 1-pint mason jar, combine vinaigrette ingredients and shake with lid on. When ready to serve, drizzle with vinaigrette.
