Vegan Tacos By Stacy Amagrande

1 large head broccoli chopped small
1 small head cauliflower chopped small
1 small onion diced
1 jalapeno minced
3 tomatoes diced small
2 tablespoons minced garlic
2 tablespoons cooking oil
1/4 cup each roasted sunflower and pumpkin seeds no salt
1big handful fresh cilantro chopped fine
Zest and juice of a lime
1teaspoon each chili powder and cumin 
Salt and pepper to taste
 
In a large pan heat oil over medium. Add onions jalapeno cauliflower and broccoli and sauteed till soft about 8 minutes. Season well with salt and pepper and add the spices. Add garlic, lime zest and juice tomatoes and cilantro,  cook 1 min more. Taste. At this point stuff into a warmed  corn or flour tortilla and top with more fresh tomatoes cilantro and avocado sliced. Yummy vegan deliciousness.
