4 medium to small zucchini sliced very thin (use veggie peeler or mandolin)
1 pint cherry tomatoes halved1 cup loose pack basil leaves torn into bite size pieces
2 stalks green onion cut into 1/4 inch slices
2 cloves garlic smashed
1 T lemon zest3 tablespoons red wine vinegar
1/4 c EVOOSalt and pepper
Put the smashed garlic, lemon zest, vinegar, salt and pepper into a bowl, whisk to combine. While whisking, add the evoo and all the veggies, toss together. Let sit 20 min. Strain off the liquid and top with the torn basil! Yum, yum enjoy!
