Caprese Quinoa Salad
1 cup quinoa, cooked
4 oz mozzarella, cut into 1/4 inch cubes
1 pt cherry tomatoes, cut in half
1 bunch spinach, chopped
½ cup fresh basil, torn into pieces, packed
¼ cup extra virgin olive oil
2 tbsp balsamic vinegar
Salt and pepper

Whisk EVOO into a small bowl with the balsamic vinegar; Season with salt and pepper

Put all other prepared ingredients into a bowl toss well; Add the dressing right before serving
