Chinese Spinach & Mushrooms

 1 bunch Chinese spinach, stems removed, coarsely chopped
 8 oz white mushrooms, sliced
 ½ cup sweet onion, diced
 3 cloves garlic, minced
 1 tbsp sesame seeds
 1 tbsp coconut oil (or your choice of oil)
 2 tsp toasted sesame oil
 1 tsp soy sauce
 1 tsp raw honey
 Sea salt & black pepper to taste

Heat the coconut and sesame oils over medium heat.

Add the onions and stir fry until the onions are tender and beginning to brown.

Add the garlic and sesame seeds and stir for about 30 seconds.

Add the mushrooms and continue stir frying for another 2-3 minutes.

Add the spinach and cook until it has wilted.

Add the honey, soy sauce, salt and pepper, and stir until the veggies are coated.

Serve and enjoy!
