Fried Green Tomatoes

 1 large green (unripe) tomatoes, ends removed, 1/2-inch slices
 ½ cup oil (coconut, safflower, olive)
 3 eggs
 1 tbsp water
 1 cup corn flour/masa
 12 tbsp Cajun seasoning

Heat the oil in a large skillet over medium to med-high heat

In a shallow bowl, add the eggs and water, then mix well.

In a second shallow bowl, combine the corn flour and desired amount of Cajun seasoning

Dredge the tomato slices in the corn flour, transfer to egg mixture, then back to corn flour mixture.

Place the coated tomato slices in the hot oil and cook for 2-3minutes on each side until they are golden brown

Drain on paper towels

This may need to be done in batches to avoid overcrowding the skillet. Serve and enjoy! May be served with your favorite Ranch Dressing or spicy aioli.
