Fried Okra with Ranch Dressing

By Micki Brown

Serves 4

Yields1 Serving
1 lb okra, smallish pods, ½-inch slices
1 ¼ cups corn flour (masa)
 1 ½ tsp garlic powder
 1 tsp ground cayenne pepper
 1 tsp sea salt
 ½ tsp black pepper
 4 free-range eggs, beaten
1 ½ cups oil (I prefer coconut oil)
Ranch Dressing Ingredients:
 ¾ cup mayonnaise
1 cup milk or buttermilk (amount depends on thickness desired)
 1 clove garlic, minced
 ½ tsp onion powder
 1 tsp dried parsley
 1 tsp dried dill weed
 ½ tsp dried cilantro
 Juice of ½ lemon
 Black pepper to taste
1

Mix all dressing ingredients together in a pint size mason jar. Put a lid on it and shake well. Refrigerate an hour or so before serving.

2

Heat oil in a large skillet over medium heat

3

In a bowl, mix together dry ingredients.

4

Place okra slices in beaten eggs.

5

Next, dredge okra in corn flour mixture, and then place in single layer in hot oil. You will need to do this in at least 2 batches

6

Cook, turning occasionally until okra is a uniform golden brown color. Remove from oil, drain on paper towels. Serve with ranch dressing.  ENJOY!

Note: Corn meal works, too, but I prefer the less gritty texture of corn flour.
