Parsley Salad

Yields6 Servings
 4 cups flat leaf parsley, finely chopped
 2 medium tomatoes, chopped
 2 medium cucumbers, chopped
 ½ cup red onion, chopped
 ¼ cup mint, chopped
 ¼ cup pumpkin seeds
 Juice of 1 lemon
 1 tbsp extra virgin olive oil
 ¼ tsp sea salt

Place all ingredients in a large bowl and toss until all ingredients are evenly distributed. Serve and enjoy!
