Spring red lettuce and cabbage salad w/ginger & vinegar dressing

Salad:
¼ Head Red Lettuce
¼ Head Green Cabbage
1 cup Red cabbage
2 cups spinach
2 cups Endive
3 Shaved Carrots
Dressing:
½ cup Onion
½ cup Peanut oil
⅓ cup Rice Vinegar
2 tbsp Water
2 tbsp fresh ginger, grated
½ stalk celery
1 tbsp Tomato Paste
4 tsp Soy Sauce
2 tsp Sugar
2 tsp Lemon Juice
½ tsp salt
¼ tsp black pepper

Toss together salad ingredients in large bowl.

Place dressing ingredients into blender and mix until smooth. Gently toss into salad.
