Strawberry Kale Salad with Cranberry Lemon Vinaigrette

Yields1 Serving
Salad Ingredients:
 4 cups kale, coarsely chopped
 ½ basket strawberries, sliced
 ½ avocado, diced
 ½ cup orange cinnamon walnuts and pecans, chopped
 Vinaigrette (recipe below)
Vinaigrette Ingredients:
  cup dried cranberries, chopped very fine in a food processor or blender
 3 tbsp apple cider vinegar
 1 tbsp raw honey
 ½ cup extra virgin olive oil
 Zest of ½ lemon
 Juice of ½ lemon
 ½ tsp poppy seeds

In a pint-sized mason jar, combine the ingredients for the vinaigrette and shake well (make ahead and let the flavors blend for a couple of hours)

Place all of the salad ingredients together in a large bowl and toss well.

Add desired amount of vinaigrette and toss/mix until the veggies are well-coated and ingredients are evenly distributed. Enjoy!
