Super Slaw

Serves 6


Slaw Ingredients:

½ bunch dinosaur kale, stemmed, chopped

1 head broccoli, chopped

2 carrots, grated

½ head red cabbage, chopped

1 large beet, peeled, diced small

4 green onions, chopped

Dressing Ingredients:

½ cup extra virgin olive oil

Juice of 1 lemon

2 tbsp Dijon mustard

2 tbsp pure maple syrup

1 tsp garlic powder

½ tsp sea salt

¼ tsp black pepper


Toss all slaw ingredients together in a large bowl.

Place dressing ingredients together in a 1-pint mason jar. Put the lid on the jar and shake until ingredients are well mixed.

Pour the dressing over the slaw and lightly toss. Serve and enjoy!
