Fennel-Apple Slaw

1 fennel bulb sliced thin
½ small red onion sliced thin
1 large apple diced small
1 grapefruit zest first then segmented
1 handful fresh cilantro chopped
Juice of 1 lemon
2 tbsp honey
¼ cup apple cider vinegar
drizzle of Extra Virgin Olive Oil
salt & pepper to taste

Combine all the produce in a bowl.

Whisk together zest, lemon juice vinegar olive oil salt and pepper.

Combine and enjoy!!
