Mushroom medley radish

Yields1 Serving
 1 lg. potato, diced small
 10 radish, diced small
 ½ white onion diced small
 1 bowl mushroom medley (variety about one pound)
 2 cloves garlic, minced
 1 tbsp salt & black pepper
 ½ tsp red pepper flake
 2 tbsp parsley, minced
 1 tsp rosemary, minced
 2 tbsp oil

Heat oil in cast iron pan over medium heat

Add potato, onion, salt, pepper and red pepper flake;  Cook 6-8 min or until onion turns translucent, and potatoes are golden, season with salt and pepper

Add radish and cook 4 min more

Add mushroom and rosemary and cook 5 min longer. Add more oil if pan is dry;

Add garlic and cook 1 more min, then remove from heat and add parsley.
