Spicy Sweet Potato Home Fries

 2 tbsp coconut oil
 2 lbs sweet potatoes, peeled, diced
 1 onion, diced
 2 tsp dried minced garlic or 3-4 garlic cloves, minced
 12 tsp Cajun or Creole spice blend
 34 green onions, sliced

In a large skillet, heat the oil over medium heat

Add the sweet potatoes and onion and continue cooking, stirring frequently. *If you're in a rush - putting a lid on it helps to get the veggies tender a little faster.

After the veggies are slightly soft, remove the lid (if needed), add the garlic and spices.

Continue cooking uncovered until the veggies are lightly browned, turning them over often. Be careful to not let them burn

Top with green onions and serve
