Vegan Tacos

1 large head broccoli chopped small
1 small head cauliflower chopped small
1 small onion diced
1 jalapeno minced
3 tomatoes diced small
2 tbsp minced garlic
2 tbsp cooking oil
¼ cup roasted sunflower seeds no salt
¼ cup pumpkin seeds no salt
1 big handful fresh cilantro chopped fine
Zest and juice of one lime
1 tsp chili powder
1 tsp cumin
salt & pepper to taste

large pan heat oil over medium heat - add onions jalapeno cauliflower and broccoli seasoned well with salt, pepper, cumin and chili powder sauté until soft - about 8 minutes

Add garlic, lime zest and juice, tomatoes and cilantro - cook 1 min more then taste

stuff into a warmed corn or flour tortilla and top with more fresh tomatoes cilantro and avocado sliced
